Nucleic acid testing (NAT) is the method of choice for detection and quantification of a wide range of micro organisms. Cl. estertheticum causes spoilage of (raw) chilled vacuum-packed red meat, including beef, lamb and venison and renders it completely unacceptable, resulting in substantial financial losses and reduced consumer confidence. A number of other species of Clostridium, including Cl. algidicarnis, Cl. putrefaciens, and Cl. gasigenes are also capable of multiplying at low temperature, and have also been implicated in this type of red meat spoilage. However, Cl. estertheticum is the most common. Cl. estertheticum is psychrophilic and capable of growing relatively rapidly in the chilled, anaerobic conditions used to store vacuum packed meat at temperatures down to minus 1.5°C. The bacteria metabolise compounds such as glucose and lactic acid, leading to production of various foul-smelling compounds, and also carbon dioxide and hydrogen - thus ‘blown pack’ spoilage.

The Primerdesign genesig Kit for Clostridium estertheticum (C. estertheticum) genomes is designed for the in vitro quantification of C. estertheticum genomes.
